step by step

Method

  1. Marinate the turkey wings

    • In a bowl, combine the washed turkey wings with the onion, ginger and garlic mix, habanero, paprika, Cajun seasoning and chicken seasoning.
    • Add the olive oil to bind the spices, then the Greek yogurt to tenderize and the barbecue sauce.
    • Mix everything together until the wings are well coated.
    Step 1
  2. Chill the marinade

    • Cover the bowl and let the turkey marinate in the fridge.
    Step 2
  3. Prepare the yam and potato cubes

    • Peel the yam and cut it into small cubes, then wash well.
    • Peel the Irish potatoes and cut them into cubes for uniformity, then wash well.
    • Combine the yam and potatoes in a bowl, season with salt, the onion, ginger and garlic mix and paprika.
    • Add a splash of olive oil and the chopped parsley, then toss so everything is evenly coated.
    Step 3
  4. Air-fry the yam and potato cubes

    • Transfer the seasoned cubes to the air fryer basket.
    • Air-fry until golden and cooked through, shaking the basket halfway.
    Step 4
  5. Slow-grill the turkey wings

    • Place the marinated turkey wings in the oven.
    • Slow-grill until perfectly golden brown and cooked through, turning occasionally.
    Step 5
  6. Blend the pepper mix

    • In a food processor, combine the tomatoes, tatashe, habanero, green bell peppers and onions.
    • Pulse to a rough mix, keeping it slightly chunky rather than smooth.
    Step 6
  7. Fry the sauce base

    • Heat the vegetable oil in a pan.
    • Add the chopped onions and sauté until golden, fragrant and translucent.
    • Pour in the blended pepper mix and cook until the oil starts floating on top.
    Step 7
  8. Season and finish the sauce

    • Season the sauce with nutmeg, curry powder and chicken seasoning.
    • Stir well and cook a little longer until everything is combined.
    Step 8
  9. Serve

    • Plate the golden turkey wings with the air-fried yam and potato cubes.
    • Serve the pepper sauce on the side.
    Step 9
