step by step

Method

  1. Make the brown butter base

    • Whisk the browned butter with the brown sugar and granulated sugar until smooth and slightly thickened.
    • Add the egg and vanilla extract, mixing until the texture is silky and uniform.
    Step 1
  2. Combine the dry ingredients

    • In a separate bowl, combine the flour, cornflour, baking soda and salt.
    • Gradually fold the dry mix into the wet mixture, stirring just until a soft dough comes together.
    • Incorporate the chocolate chips.
    Step 2
  3. Chill the dough

    • Refrigerate the dough to improve flavour and help it hold its shape during baking.
    Step 3
  4. Shape into fries

    • Preheat the oven to 175 °C (350 °F).
    • Press the chilled dough into a rectangle about 1.5 cm thick, then slice into narrow strips.
    • Place the strips onto a parchment-lined tray and freeze.
    Step 4
  5. Bake

    • Bake until the edges are lightly golden while the centres remain soft.
    • If needed, gently neaten the shapes immediately after baking while still warm.
