step by step

Method

  1. Caramelize the onions

    • Heat the olive oil and butter in a large pan over low heat.
    • Add the diced onion and cook low and slow, stirring often, until deeply caramelized and sweet.
    • Take your time here — the onions are the entire base of the dish.
    Step 1
  2. Add garlic, thyme and deglaze

    • Add the minced garlic and fresh thyme sprigs and cook for a minute until fragrant.
    • Pour in the balsamic vinegar and white wine and let it bubble and reduce.
    Step 2
  3. Thicken and simmer the pasta

    • Sprinkle over the plain flour and stir to coat the onions.
    • Pour in the vegetable stock and bring to a simmer.
    • Add the dried pasta and simmer directly in the broth, stirring occasionally, until the pasta is cooked and the sauce has thickened.
    Step 3
  4. Finish with cream and cheese

    • Stir in the double cream and the mature cheddar until you have a thick, creamy sauce.
    • Season with salt and black pepper to taste.
    Step 4
  5. Grill the top

    • Scatter extra cheddar over the top of the pasta.
    • Grill until golden and bubbling.
