  • Mixing bowl
  • Whisk
  • Mandoline
  • Oven

step by step

Method

  1. Prepare the apples

    • Peel and core the apples.
    • Slice them very thinly with a mandoline so they almost melt into the batter.
    Step 1
  2. Make the batter

    • Whisk the eggs with the sugar and salt until pale.
    • Add the warm milk, melted butter and vanilla extract.
    • Sift in the flour and baking powder and whisk to a smooth, runny batter.
    Step 2
  3. Coat the apple slices

    • Add the apple slices to the batter and mix gently so every slice is coated.
    • Let the mixture rest so the apples soften slightly.
    Step 3
  4. Fill the pan

    • Butter the loaf pan.
    • Layer the coated apple slices one by one, pressing lightly to remove air pockets.
    • Pour the remaining batter over the top.
    Step 4
  5. Bake

    • Bake in a preheated oven at 180 °C until golden and set in the centre.
    Step 5
  6. Cool and serve

    • Let the cake cool completely in the pan so it firms up.
    • Unmould and slice to reveal the layers of apple.
    Step 6
