step by step

Method

  1. Sear the lobster and start the base

    • Heat a pan and add the lobster tails, butter, onion and garlic.
    • Cook until the lobster meat is just done, then remove the meat and reserve it, keeping the shells.
    Step 1
  2. Make the roux

    • Sprinkle the plain flour into the pan and stir to make a quick roux.
    • Cook until it looks smooth and lightly golden.
    Step 2
  3. Cook the pasta

    • Bring a pot of water to a boil and add the reserved lobster shells.
    • Add the elbow macaroni and cook until al dente.
    • Drain, discarding the shells.
    Step 3
  4. Build the cheese sauce

    • Pour the milk into the roux and whisk until smooth.
    • Add the nutmeg, cayenne and smoked paprika, then stir and let it thicken.
    • Season with salt and pepper, then stir in the cream and Worcestershire sauce.
    • Add the cheddar and Gruyère and stir until melted.
    Step 4
  5. Combine pasta and lobster

    • Fold the macaroni into the cheese sauce, adding a splash of milk if it looks dry — it should be wet.
    • Add the reserved lobster meat and press everything into a baking dish.
    Step 5
  6. Add the crispy topping

    • Mix the panko, Parmesan and melted butter.
    • Sprinkle the topping evenly over the mac and cheese.
    Step 6
  7. Bake

    • Bake at 200 °C until bubbling, crispy and gooey.
    Step 7
  8. Garnish and serve

    • Top with the reserved lobster tails and fresh chives.
    • Serve hot.
    Step 8
