Method

  1. Make the cinnamon swirl

    • Melt part of the butter and stir in the granulated sugar and cinnamon until you get a smooth, thick paste.
    • Transfer to a small piping bag or squeeze bottle and set aside.
    Step 1
  2. Mix the dry ingredients

    • Whisk together the flour, baking powder, baking soda, cinnamon, pumpkin pie spice and salt in a large bowl.
    Step 2
  3. Mix the wet ingredients

    • In another bowl, whisk the pumpkin puree, eggs, milk, brown sugar and remaining melted butter until smooth.
    Step 3
  4. Make the pancake batter

    • Pour the wet ingredients into the dry and fold gently until just combined — do not overmix.
    • Let the batter rest so it thickens slightly.
    Step 4
  5. Cook the pancakes with the swirl

    • Heat a buttered pan or griddle over medium-low heat and pour in the batter.
    • Once bubbles form on the surface, pipe a spiral of the cinnamon sugar swirl over each pancake.
    • Flip and cook until golden and the swirl is caramelized into the pancake.
    Step 5
  6. Whip the honey cinnamon butter

    • Beat the softened butter with the honey and a pinch of cinnamon until light and fluffy.
    Step 6
  7. Serve

    • Stack the warm pancakes and top with the whipped honey cinnamon butter.
    • Drizzle with maple syrup and serve immediately.
