Préparation

  1. Prepare the cabbage

    • Slice off the base of the cabbage with a very sharp knife.
    • Peel off the first two layers to remove any old leaves.
    • Carefully cut out the centre, working your way around, until the core pops out.
    Étape 1
  2. Score the top

    • Make incisions through the top of the cabbage so the oil, butter and seasoning seep inside.
    Étape 2
  3. Season the cabbage

    • Rub olive oil all over the cabbage, including the inside.
    • Season with salt, pepper, garlic powder, onion powder, cumin, Cuban Cajun seasoning, smoked paprika and Tony's seasoning.
    Étape 3
  4. Add the butter and wrap

    • Place the butter quarters in the centre cavity and press down.
    • Wrap the cabbage in two layers of aluminium foil, folding it into a little peak at the top.
    Étape 4
  5. Roast

    • Set the wrapped cabbage on a pan and bake at 200 °C.
    Étape 5
  6. Add water halfway

    • Open the foil and add a little water to help the cabbage soften and become tender.
    • Close it back up and return to the oven.
    Étape 6
  7. Serve

    • Unwrap the cabbage once tender and serve it with the buttery juices from the pan.
    Étape 7
