Method

  1. Sauté the onion and brown the beef

    • Heat the oil in a skillet over medium-high heat.
    • Sauté the onion for 2–3 minutes.
    • Add the ground beef and cook, breaking it up, until browned and cooked through, about 6–8 minutes.
    Step 1
  2. Season the beef

    • Add the salt, black pepper, garlic powder, paprika, onion powder, cumin and coriander.
    • Stir in the garlic paste and cook for 30 seconds.
    Step 2
  3. Add tomato paste, chipotle and bell peppers

    • Add the tomato paste and chipotle peppers and cook for 2–3 minutes.
    • Add the bell peppers and cook for another 2–3 minutes.
    Step 3
  4. Simmer the filling

    • Add the water and reduce the heat to medium-low.
    • Simmer until the filling is thick and the liquid has reduced.
    • Turn off the heat and stir in the lime juice and cilantro.
    Step 4
  5. Make the chipotle taco sauce

    • Mix the mayonnaise, sour cream, chipotle peppers in adobo, hot sauce, lime juice, honey, garlic powder, cumin and salt in a bowl until smooth and creamy.
    • Adjust the seasoning to taste.
    Step 5
  6. Preheat the oven and warm the tortillas

    • Preheat the oven to 200 °C (400 °F).
    • Lightly warm the tortillas.
    Step 6
  7. Fill and assemble the tacos

    • Brush a baking dish and the tortillas with oil.
    • Fill each tortilla with the beef mixture and place seam-side down in the dish.
    • Top with the shredded mozzarella and cheddar.
    Step 7
  8. Bake the tacos

    • Bake until crispy around the edges and the cheese is melted and bubbly.
    • Broil for 1–2 minutes for extra browning, if desired.
    Step 8
  9. Serve

    • Drizzle with the chipotle taco sauce.
    • Garnish with cilantro and serve with fresh lime wedges.
