step by step

Method

  1. Prepare the chicken

    • Pound the chicken breasts thin and season with salt and pepper.
    • Set up three bowls: flour, beaten eggs, and breadcrumbs mixed with parmesan.
    Step 1
  2. Bread the chicken

    • Dredge each cutlet in flour, then egg, then the breadcrumb mixture, pressing to coat.
    Step 2
  3. Fry the cutlets

    • Heat the vegetable oil in a frying pan over medium-high heat.
    • Fry the cutlets until golden and cooked through, about 4 min per side.
    • Drain on paper towels.
    Step 3
  4. Make the vodka sauce

    • Heat the olive oil in a saucepan and sauté the garlic until fragrant.
    • Stir in the tomato paste and cook briefly, then add the crushed tomatoes and red pepper flakes.
    • Pour in the vodka and simmer to cook off the alcohol, then stir in the heavy cream and simmer until thickened.
    • Season with salt and finish with basil.
    Step 4
  5. Cook the spaghetti

    • Boil the spaghetti in salted water until al dente.
    • Drain, reserving a little pasta water.
    Step 5
  6. Assemble and bake

    • Spoon some vodka sauce into a baking dish and lay the chicken cutlets on top.
    • Cover with more sauce and the shredded mozzarella.
    • Bake at 200 °C until the cheese is melted and bubbling.
    Step 6
  7. Serve

    • Serve the chicken parm over the spaghetti with extra sauce and basil.
    Step 7
