step by step

Method

  1. Make the pork filling

    • Place the ground pork, green onions, chicken powder, oyster sauce, soy sauce, sugar, minced ginger, minced garlic, black pepper, cooking wine and chicken broth into a zip-top bag.
    Step 1
  2. Mix the filling

    • Remove the excess air and seal the bag.
    • Massage the bag until the mixture becomes sticky and well combined.
    Step 2
  3. Prepare the piping bag

    • Push the pork mixture toward one corner of the bag.
    • Cut a small hole at the corner to use the bag like a piping bag.
    Step 3
  4. Assemble the lazy dumplings

    • Pipe the pork filling into a small heat-resistant bowl, filling it about a third full, then gently press it flat.
    • Place one dumpling wrapper on top of the filling in each bowl.
    • If the wrappers are thick, briefly soak them in water for a second before placing them on the filling.
    Step 4
  5. Steam the dumplings

    • Place the bowls into a pot and add water until it reaches about half the height of the bowls.
    • Cover with a lid and steam over medium heat until fully cooked.
    Step 5
  6. Serve

    • Serve hot with chili oil, soy sauce, sesame seeds or green onions, if desired.
