    • Pour in the enchilada sauce and mix well to coat the beef.
    Step 1
  2. Scramble the eggs

    • In the same pan, add the beaten eggs and scramble on medium heat, stirring every 20 seconds until super fluffy.
    • Season with salt to taste.
    Step 2
  3. Fill and roll the tortillas

    • On a warm tortilla, lay the light cheese slices, then add the scrambled eggs, taco beef and low fat grated cheese.
    • Fold in the sides and roll up tightly, repeating until you have all the rolls.
    Step 3
  4. Bake or air fry

    • Give the rolls a spray and sprinkle with chopped parsley.
    • Bake or air fry until golden and crispy.
    Step 4
  5. Store and reheat

    • Wrap the rolls in foil and store in the freezer for months.
    • To reheat, unwrap, wrap in a paper towel, run under water and squeeze out the excess, then microwave for 5-6 minutes.
    • Unwrap carefully and air fry or toast in a pan for a couple of minutes to get crispy.
