step by step

Method

  1. Season the ground beef

    • In a mixing bowl, combine the ground beef with the grated onion, chopped tomato, garlic and parsley.
    • Add the seven spice, cinnamon, allspice, black pepper and salt, and mix well until evenly seasoned.
    Step 1
  2. Shape the kofta

    • Shape the mixture into meatballs, or into finger-like shapes as is traditional.
    Step 2
  3. Prepare the potatoes

    • Peel the potatoes and slice them into rounds.
    • Arrange the raw potato slices in an oiled baking dish (or fry them first for a richer result).
    Step 3
  4. Mix the tomato sauce

    • Whisk together the tomato sauce, water, tomato paste, pomegranate molasses, dried mint and the remaining spices.
    Step 4
  5. Assemble the bake

    • Place the kofta over the potatoes in the baking dish.
    • Pour the tomato sauce evenly over the top.
    Step 5
  6. Bake

    • Bake until the beef is fully cooked and tender and the potatoes are soft; raw potatoes need a little longer.
