step by step

Method

  1. Score and flatten the steaks

    • Make shallow cuts in a grid pattern on both sides of the steaks.
    • Pound the meat flat with a mallet or the back of a knife.
    Step 1
  2. Marinate with onions

    • Spread the minced onions over both sides of the meat.
    • Let it sit so the onions soften the meat.
    Step 2
  3. Season the meat

    • Remove the onions and set them aside.
    • Season the steaks with salt and black pepper.
    Step 3
  4. Sear the steaks

    • Melt the butter in a pan and sear the meat.
    • Alternatively sear in beef fat or oil over high heat for 2–3 minutes per side.
    • Let the meat rest.
    Step 4
  5. Caramelize the onions

    • Sauté the onions in the meat juices until caramelized.
    Step 5
  6. Make the sauce

    • Deglaze the pan with red wine, soy sauce and butter.
    • Sauté the onions in the sauce.
    • Mix the starch with water, add it and simmer until thick and glossy.
    Step 6
  7. Make the pickled plum paste

    • Remove the pits from the umeboshi and mash the flesh with a spoon or mortar until smooth.
    • Add a touch of honey and sugar to mellow the sourness, keeping it minimal.
    Step 7
  8. Assemble the don

    • Mix the rice with the umeboshi paste and divide into bowls.
    • Slice the steak and place it on top.
    • Spoon over the onions and sauce, then finish with green onions.
    Step 8
