step by step

Method

  1. Season the salmon

    • Pat the salmon fillets dry with paper towel.
    • Season both sides generously with salt and black pepper.
    Step 1
  2. Sear the salmon

    • Heat the olive oil and half of the butter in a frying pan over medium-high heat.
    • Place the salmon in the pan and sear until golden and crisp on the bottom.
    • Flip and cook the other side until the salmon is just cooked through, then transfer to a plate.
    Step 2
  3. Make the creamy garlic sauce

    • Lower the heat to medium and add the remaining butter to the pan.
    • Add the minced garlic and cook until fragrant, without browning.
    • Pour in the heavy cream and stir, scraping up the browned bits.
    • Stir in the grated parmesan until melted and the sauce is smooth.
    • Add the lemon juice and season with salt and pepper to taste.
    Step 3
  4. Finish and serve

    • Return the salmon to the pan and spoon the creamy garlic sauce over the fillets.
    • Simmer gently so the salmon warms through and soaks up the sauce.
    • Sprinkle with chopped parsley and a little lemon zest, then serve.
