step by step

Method

  1. Season the chicken

    • Place the chicken thighs in the slow cooker.
    • Add the Worcestershire sauce, minced garlic, Dijon mustard, salt, garlic powder, onion powder, black pepper, thyme, beef bone broth and the rosemary sprig.
    • Toss so the chicken is evenly coated.
    Step 1
  2. Slow cook the chicken

    • Cover and cook on high for 3 to 4 hours or on low for 4 to 5 hours, until the chicken shreds easily.
    Step 2
  3. Caramelize the onions

    • Melt the butter in a pan and add the diced yellow onions.
    • Cook slowly, stirring often, until deeply golden and caramelized.
    Step 3
  4. Build the French onion base

    • Deglaze the onions with the beef bone broth, Worcestershire sauce, soy sauce and Dijon mustard.
    • Add the optional rosemary and thyme sprigs and simmer to bring the flavors together.
    Step 4
  5. Blend the cheese sauce

    • Blend the cottage cheese, Gruyère, Parmigiano Reggiano and milk until completely smooth.
    • Stir in about three quarters of the caramelized onions and season with black pepper and salt.
    Step 5
  6. Cook the pasta

    • Boil the rigatoni until only 50% cooked, then drain, keeping some pasta water aside.
    Step 6
  7. Combine everything

    • Shred the cooked chicken in the slow cooker.
    • Add the cheese sauce, the pasta and the pasta water and stir to combine.
    • Let it heat through and thicken slightly in the slow cooker.
    Step 7
  8. Garnish and serve

    • Top with the remaining caramelized onions and chopped chives.
    • Divide into meal prep portions.
    Step 8
