step by step

Method

  1. Season the chicken

    • In a bowl, toss the chicken pieces with the smoked paprika, cayenne pepper, garlic powder, chicken bouillon, black pepper, Italian seasoning and avocado oil until evenly coated.
    Step 1
  2. Sear the chicken

    • Heat a frying pan over medium-high heat and sear the chicken until golden and cooked through, about 8 minutes.
    • Transfer the chicken to a plate and set aside.
    Step 2
  3. Cook the pasta

    • Boil the pasta in salted water until al dente, reserving a cup of the cooking water before draining.
    Step 3
  4. Build the sauce

    • In the same pan, melt the butter and sauté the diced onion until soft and translucent.
    • Add the sun-dried tomatoes and tomato paste and cook until the paste darkens slightly.
    • Pour in the heavy cream and a splash of pasta water, then stir in the spices used for the chicken.
    Step 4
  5. Finish with spinach and chicken

    • Stir the baby spinach into the sauce until wilted.
    • Return the chicken to the pan and add the grated parmesan.
    Step 5
  6. Combine and serve

    • Add the cooked pasta to the pan and toss, loosening with pasta water until the sauce coats every piece.
    • Serve hot, topped with extra parmesan if desired.
