Method

  1. Cut and freeze the mozzarella

    • Slice the low-moisture mozzarella into ½–1 inch sticks.
    • Lightly dust the sticks in flour.
    • Freeze for 1 hour.
    Step 1
  2. Bread the sticks

    • Dip the frozen mozzarella into the beaten egg, then into the breadcrumbs.
    • Dip back into the egg and breadcrumbs again for a double coating.
    Step 2
  3. Fry the mozzarella sticks

    • Heat the oil to 350°F (175°C).
    • Fry the mozzarella straight from frozen for 2–3 minutes, until golden and crispy.
    • They are ready when they float to the top and look puffy.
    • Don't overcrowd the pan.
    Step 3
  4. Make the Nashville hot oil

    • While the sticks fry, mix ½ cup of the hot frying oil with the cayenne, paprika, garlic powder and brown sugar.
    Step 4
  5. Coat and serve

    • As soon as the mozzarella sticks come out, brush or toss them in the hot oil while they're still steaming.
    • Serve immediately with ranch.
