Method

  1. Marinate the ribs

    • Place the beef ribs in a large dish and coat with the juice of the oranges and part of the apple cider vinegar.
    • Season generously with onion powder, paprika, wood fire garlic seasoning, cayenne, salt and black pepper, then rub in the brown sugar.
    • Let the ribs marinate while the oven preheats to 300 °F (150 °C).
    Step 1
  2. Bake the ribs covered

    • Transfer the ribs to a foil-lined baking tray and pour the beef broth into the foil.
    • Wrap tightly to trap the steam and bake at 300 °F (150 °C) for 3 hours until tender.
    Step 2
  3. Make the honey garlic sauce

    • In a saucepan combine the bbq sauce, honey, brown sugar, molasses, soy sauce, worcestershire sauce, minced garlic, remaining apple cider vinegar, black pepper and paprika.
    • Mix well and simmer until the sauce thickens.
    Step 3
  4. Glaze and finish the ribs

    • Brush the honey garlic sauce generously over the cooked ribs.
    • Return uncovered to the oven at 425 °F (220 °C) for 10–15 minutes until sticky and caramelized.
    Step 4
  5. Cook the pasta

    • Boil the macaroni in salted water until al dente, then drain.
    Step 5
  6. Make the cheese sauce

    • Melt the butter in a pot and whisk in the flour to form a roux.
    • Season with garlic powder, onion powder, paprika, black pepper and salt, then slowly whisk in the warm milk and heavy cream until smooth and thickened.
    • Off the heat, stir in the cheddar, mozzarella and gouda until fully melted.
    Step 6
  7. Assemble and bake the mac and cheese

    • Fold the cooked macaroni into the cheese sauce and transfer to a baking dish.
    • Top with extra cheese if desired and bake at 375 °F (190 °C) for 25–30 minutes until golden and bubbling.
    Step 7
  8. Serve

    • Serve the sticky honey garlic ribs alongside the mac and cheese.
