  • Kitchen thermometer

step by step

Method

  1. Preheat the oven and prep the vegetables

    • Preheat the oven to 200 °C (400 °F).
    • Dice the baby potatoes and quarter them so they cook faster.
    • Cut the asparagus into pieces (green beans work too).
    Step 1
  2. Sear the pork tenderloin

    • Add the oil to an oven-safe skillet and heat it.
    • Once hot, sear the pre-seasoned pork tenderloin on both sides, flipping so each side gets seared.
    Step 2
  3. Add the vegetables to the skillet

    • Add the potatoes and asparagus around the pork.
    • Mix the vegetables a little; no extra seasoning is needed since the pork seasons them.
    • Drizzle some oil over the potatoes and asparagus.
    Step 3
  4. Roast in the oven

    • Bake at 200 °C (400 °F) for 30 minutes.
    • The pork is done when its internal temperature reaches 63 °C (145 °F).
    Step 4
  5. Serve

    • Take the skillet out of the oven and serve the pork with the seasoned vegetables.
